Product description

Tamanohikari Black Label Junmai Daiginjo is a super premium sake originating from the Fushimi district of the Kyoto prefecture in Japan. It is crafted by Tamanohikari Sake Brewing Co., a historic brewery founded in 1673 that is renowned for being one of the first in the industry to focus exclusively on pure rice 'junmai' sake. This flagship 'Brilliant Soul' expression represents the pinnacle of the brewery's craft, utilizing the ancient and rare Bizen Omachi rice variety.

Description

This sake presents an exquisite, defined, and elegantly smooth sensory profile. It features a gorgeous aromatic bouquet with notes of muscat melon, western pear, ripe banana, and delicious apple. On the palate, it offers sophisticated layers of white grapes and lychee, reflecting the deep umami characteristics of the Bizen Omachi rice which is polished to an ultra-refined 35% using a special 'henpei' (flat) polishing method. The body is medium with a balanced acidity, leading to a refined finish. It has an alcohol by volume of 16.2% and is best enjoyed chilled to maintain its delicate floral top notes.

Food Pairing

The refined and complex nature of Tamanohikari Black Label makes it a perfect match for high-quality, delicate fare. Its fruity acidity and smooth texture complement premium seafood such as sashimi (fatty tuna, scallops), Chinese-style steamed fish, or lightly seared prawns with citrus. Surprisingly, its robust Omachi rice base also allows it to pair exceptionally well with rich Western dishes like prosciutto ham, filet mignon, or truffle risotto. For a lighter option, try it alongside a zesty melon salad to bridge the gap between the sake's floral notes and the dish's brightness.
