Produced as part of the innovative Fento Wines project led by acclaimed winemaker Eulogio Pomares of Bodegas Zárate—an estate whose winemaking pedigree in the region dates back to 1707—the wine reflects a deeply rooted regional expertise. The operational philosophy behind this label focuses on capturing pure varietal character and vibrant energy. By sourcing fruit from prime, small plots across the historic Val do Salnés subregion, the project exalts the crisp, saline identity of coastal Galicia through natural, low-intervention viticulture.
Wine Description
This white wine presents a bright straw-yellow appearance with subtle, shimmering green highlights in the glass. It possesses a light-to-medium-bodied structure characterized by a zippy, crisp, and remarkably refreshing texture. The sensory profile is highly expressive, fruity, and aromatic, opening with an intense nose of zesty citrus fruits, passion fruit, and white peach, intricately woven with delicate notes of fresh fennel and an exotic tropical lift. On the vibrant, lively palate, it delivers a juicy wave of flavors reminiscent of biting into a ripe green apple and pear, seamlessly balanced by a bracing, electric natural acidity and a distinct vein of saline minerality. The finish is remarkably clean, long, and persistent, leaving a lingering impression of citrus peel, leafy freshness, and crunchy orchard fruit.
Varietal Composition: 100% Albariño.
Stylistic Notes: The wine is celebrated for its textbook varietal purity and thirst-quenching style. To retain maximum aromatic freshness, the grapes are hand-harvested early in the morning, followed by a cool fermentation in temperature-controlled stainless steel tanks. The wine is cold-stabilized and filtered before bottling without any oak maturation, ensuring a crisp, unadorned expression of the fruit.
