Amatiteña Extra Añejo Tequila is a flagship, ultra-aged artisanal expression produced in Amatitán, Jalisco, Mexico (NOM 1477 Tequila Selecto de Amatitán) under Master Distiller Alberto Partida. Rooted in ancestral Lowland (Valles) craftsmanship, Amatiteña is distinguished by its dedication to traditional, wood-fired production methods that predate modern industrial tequila making. Aged well beyond the three-year legal minimum for the Extra Añejo designation, this additive-free spirit marries the bold, wood-cooked agave character of Amatitán with profound barrel depth, oak complexity, and dried fruit richness.
Spirit Description
Amatiteña Extra Añejo begins with mature, estate-grown 100% Blue Weber agaves harvested from the Lowlands. In keeping with ancient traditions, the agave piñas are cooked in mesquite and oak-fired brick ovens (hornos), imparting a signature whisper of natural wood smoke. The cooked agaves are crushed entirely using a volcanic stone tahona wheel and fermented with airborne wild yeasts in open wooden vats alongside the agave fibers (bagazo). Distilled in small copper pot stills, the spirit enters select oak barrels often ex-bourbon and charred American white oak—where it rests undisturbed for a minimum of 3 to 5 years. Unfiltered and completely additive-free, it bridges Lowland agave intensity with mature wood elegance.
Colour: Deep amber-mahogany with warm copper and dark gold reflections, forming thick, slow-moving legs in the glass.
Aroma: Deeply complex, warm, and inviting. Opens with rich roasted agave, mesquite wood smoke, and dark caramel, giving way to dried figs, dark chocolate, toasted oak, vanilla bean, and soft baking spices (cinnamon and nutmeg).
Palate: Rich, full-bodied, and multi-layered on the entry. Upfront flavors of sweet cooked agave, dark honey, and gentle wood smoke seamlessly merge with butterscotch, toasted nuts, dark cocoa, leather, and subtle dried citrus peel.
Body: Full-bodied with a luxurious, velvety, and viscous mouth-coating texture.
Finish: Exceptionally long, warm, and satisfying, trailing off with persistent roasted oak tannins, sweet cooked agave, dark chocolate, and a delicate mineral-and-smoke snap.
ABV: Typically bottled between 42% and 45% ABV (84 to 90 Proof).
