Produced by Asahi Shuzo, a brewery that transformed from near-bankruptcy to global fame, Dassai is renowned for producing exclusively premium Junmai Daiginjo grade sake. The name "Dassai" translates to "otter festival," a nod to local folklore and the brewery’s philosophy of continuous innovation rather than complacency with tradition. The "45" refers to the rice polishing ratio, where each grain of top-grade Yamada Nishiki rice is milled down to 45% of its original size to ensure purity and elegance.

Description

This world-renowned sake is clear and crystalline with silvery reflections. The nose is exquisitely rich and fresh, dominated by aromas of honeydew melon and white peach with subtle floral notes of jasmine and white blossoms. On the palate, it is light-bodied and silky, offering a "tropical party" of flavors including pineapple, mango, sweet apple, and a hint of almond. It strikes a masterful balance between subtle sweetness and mild acidity, finishing clean and crisp without any lingering aftertaste. ABV 15.5%–16%.

The "clean, soft, and fruity" profile of Dassai 45 makes it an exceptionally approachable pairing for both Japanese and Western cuisines. It is classic alongside sushi, sashimi, and lightly fried tempura.
