This cuvée is an absolute celebration of Chardonnay, sourced exclusively from the prestigious Grand Cru villages of the Côte des Blancs: Avize, Chouilly, Cramant, and Le Mesnil-sur-Oger. Operating under a winemaking philosophy of precision, purity, and strict site transparency, the house masterfully leverages these distinct limestone terroirs to construct a Blanc de Blancs that marries intense mineral drive with an ethereal, weightless elegance.
Wine Description
The Billecart-Salmon Le Blanc de Blancs Grand Cru presents a stunning, luminous yellow-gold appearance in the glass, enlivened by delicate greenish reflections and an ultra-fine, persistent stream of elegant bubbles. Its sensory profile displays a pure and high-toned mineral intensity, unfolding a sophisticated bouquet of fresh lemons, confit citrus oil, white orchard fruits, and white flowers, beautifully layered with rich nuances of warm brioche, fresh butter, and fresh almonds. On the palate, the wine is medium-to-full-bodied, pillowy, and remarkably incisive, showcasing a creamy meringue-like texture balanced by a razor-sharp, flinty tang. It is characterized by its outstanding, laser-focused natural acidity and a high-definition chalky structure. The finish is exceptionally chiseled, long, and persistent, culminating in a pristine wave of citrus zest and a distinctive, mouthwatering saline minerality.
This 100% Chardonnay is vinified at strictly controlled low temperatures in stainless steel tanks to safeguard the pristine fruit definition and protect it from premature oxidation. The non-vintage blend incorporates a generous 30% to 40% of aged reserve wines to ensure a flawless signature continuity. Following secondary fermentation, the bottling undergoes an extended maturation on its fine lees in the house's deep chalk cellars for 4 to 5 years—far exceeding the legal requirement. It is finished with a precise, low dosage (ranging from 1.7 to 3.9 grams per litre depending on the base disgorgement), keeping its profile piercingly fresh and dry, and reaches an alcohol content (ABV) of 12.0%.
