Product description
Michter's Bomberger's Declaration Straight Bourbon is an annual limited release Kentucky Straight Bourbon Whiskey from the country of the United States. It is produced by Michter's Distillery, which is based in Shively, Kentucky. The bourbon is part of the Michter's 'Legacy Series' and is named in honour of the historic Bomberger's Distillery in Pennsylvania, which eventually became Michter's in the 20th century. The original Bomberger's facility ceased operations in the 1980s. The Declaration series began in 2014.
Spirit Description
This is a small batch Kentucky Straight Bourbon Whiskey featuring a high-corn mash bill, though the specific proportions are not disclosed. It is bottled without an age statement. A defining feature is the use of Chinquapin oak (Quercus muehlenbergii) barrels, or a blend of barrels whose wood has been naturally air-dried and seasoned outdoors for varying periods, such as 18 months, 3 years, 4 years, or 5 years. This extended seasoning alters the oak's chemical contributions during aging. The colour is described as rich mahogany or dark gold. The nose is complex, often featuring Bananas Foster, sour mash, saltwater taffy, baking spices, black cherry, dark fruit, roasted nuts, and salted caramel. The palate is bold, round, and multi-dimensional, with flavours of cinnamon, chocolate, dark vanilla, coffee, clove, and dark toffee. The spirit showcases a distinctive oak influence, with a fascinating intersection of tart, sweet, and woody notes. The finish is medium-long, with lingering tannins, spiced fruit echoes, and a warm hug. It is bottled at 108 proof, or 54% ABV.
Food Pairing
The robust, bold, and oak-driven nature of this bourbon makes it an excellent choice for sipping neat. Its pronounced oak, dark fruit, and baking spice profile pairs exceptionally well with rich, heavy flavours. Suggested pairings include dark chocolate, pecan pie, or other rich desserts. For a savoury pairing, the whiskey's intensity would stand up well to barbecue or slow-smoked meats.
