"Col Fondo" means an older, more labor intensive style of production that undergoes a second fermentation in the bottle, and is a lot more nuanced and delicate. Something like Prosecco x Champagne method x Pet Nat profile. This bottle from Case Paolin is a dusty goldenrod color with notes of yellow apple, asian pear and wheat grain. A delightful aperitivo.
