The Harvey family established Chalk Hill in 1964, bringing a viticultural legacy that spans six generations and over 185 years. The winery is dedicated to small-batch, hand-crafted production, utilizing organic farming practices across their six distinct estate vineyards to showcase the unique terroir and varietal purity of the region.
Wine Description
This Cabernet Sauvignon presents a deep garnet red with purple hues. The nose is highly perfumed and concentrated, featuring aromas of blackcurrant, blueberry, and red plum, layered with notes of dark chocolate, violets, and tobacco leaf. On the palate, the wine is medium to full bodied and vibrant, delivering rich flavours of blackberry and cassis complemented by leafy herbaceous notes such as thyme and dried mint. It is well structured with firm, velvety tannins and a balanced acidity that leads to a long, lingering finish with hints of spice and mocha. While drinking beautifully now, it has the potential to cellar for 5 to 7 years.
