Product description

This uncompromising zero-dosage sparkling wine originates from France, in the village of Urville within the Côte des Bar subregion of Champagne. The Drappier family traces its agricultural roots back to Saint Bernard, who established the historic Cistercian cellars in Urville in 1152, though the family estate was formally founded in 1808. Today, the eighth generation—Michel Drappier alongside his children Charline, Hugo, and Antoine—leads the house with an ardent focus on eco-responsibility, minimal intervention, and organic viticulture. Drappier is widely recognized as a pioneer of zero-dosage Champagnes, having launched this cuvée in the 1980s. Sourced from estate vineyards planted on rich Kimmeridgian limestone soils, this wine stands out as a pure, unadorned expression of southern Champagne terroir.

Wine Description

In the glass, this Blanc de Noirs shows a pale gold colour with copper reflections and a delicate, continuous mousse. The nose opens with vibrant aromas of fresh red apple, white peach, citrus zest, and quince, layered alongside subtle notes of warm brioche, white flowers, and crushed stone minerality. On the palate, it exhibits raw energy, precision, and structural focus. Crafted entirely from 100% Pinot Noir, only the first press (la cuvée) is used, with mechanical pumping minimized to prevent oxidation. The wine undergoes natural gravity-led settling (débourbage) and full malolactic fermentation, using minimal sulfur additions. It is aged on its lees in the cellar for 30 to 36 months before being finished completely bone-dry with 0 g/L dosage (Zero Dosage). The alcohol by volume sits at 12%.

The strict dryness, high acidity, and broad vinous weight of this zero-dosage Pinot Noir make it a superb culinary companion. It excels when paired with raw and delicate seafood preparations, including fresh oysters, sushi, sashimi, tuna tartare, and sea bass carpaccio. Its laser-like tension cuts through rich, savory dishes like smoked salmon, pan-seared scallops, or grilled prawns. For non-seafood pairings, try it with roasted poultry, carpaccio of beef, or young artisanal goat cheese such as Sainte-Maure de Touraine.
