While Domaine Chandon is widely known for its California and Argentine estates, it maintained a notable historical presence in Spain under the 'Chandon Spain' label to produce traditional method sparkling wines. This particular cuvée was developed as an exclusive private label for Hyatt Hotels, combining the house's global winemaking expertise with the traditional heritage of Spanish Cava production.

Wine Description

This Cava presents a bright straw yellow colour with a persistent and fine bead. The sensory profile is elegant and complex, featuring aromas of white peach, citrus zest, and floral notes, balanced by the classic toasted brioche and almond characters derived from its time on lees. On the palate, it is crisp and lively, offering a refreshing acidity with flavours of green apple, pear, and a subtle hint of honey. Following the Cava tradition, the blend typically utilizes indigenous Spanish varieties such as Macabeo, Xarel lo, and Parellada, sometimes enhanced with Chardonnay for additional finesse. It is balanced and medium bodied, finishing with a clean, dry, and mineral length.
