Cimarron Tequila Blanco is an acclaimed, bartender-favorite 100% Blue Weber agave tequila produced at the historic Enrique Fonseca distillery (DPO / NOM 1146 Tequila Scagliotti) in Atotonilco el Alto, Jalisco, Mexico. Created through a partnership between Master Distiller Enrique Fonseca and Haas Brothers, Cimarron was specifically engineered to deliver an uncompromised, additive-free artisanal Highland (Los Altos) tequila at a high-value, accessible price point. Named after the wild, unbridled "Cimarron" horses, it has earned a cult following among professional mixologists as one of the best speed-rail and cocktail-foundational Blancos in the industry.
Spirit Description
Cimarron Blanco is crafted using 100% estate-grown Highland Blue Weber agaves harvested at high sugar maturity (brix) from fields situated over 4,600 feet above sea level. The agaves are slow-cooked using a combination of traditional brick ovens (hornos) and low-pressure autoclaves to preserve the bright, sweet character of the plant. A defining feature of Cimarron’s production is its unique fermentation: it uses a propriety blend of wine yeasts and undergoes an unusually long, slow, low-temperature fermentation process in stainless steel tanks, resulting in a rich, ester-driven flavor profile. It is double-distilled in a combination of copper pot stills and column stills, then bottled directly without aging.
Colour: Crystal clear, bright, and transparent with medium legs in the glass.
Aroma: Bright, vibrant, and agave-forward. Opens with rich roasted agave, fresh-cut grass, crisp lime zest, and white pepper, followed by subtle mineral notes, green apple, and a touch of tropical fruitiness.
Palate: Crisp, clean, and full of flavor on the entry. Upfront sweet cooked agave and bright citrus (lemon and lime peel) blend seamlessly with wet-stone minerality, black pepper, and subtle herbal undertones.
Body: Medium-bodied with a smooth, bright, and surprisingly oily mouthfeel for an unaged spirit.
Finish: Crisp, dry, and warm, leaving a long, pleasant trail of sweet roasted agave, citrus oil, and a snappy peppery kick.
ABV: Bottled at 40% ABV (80 Proof).
