Product description
Dai Shichi Kimoto Classic Junmai originates from Nihonmatsu City in the Fukushima Prefecture of Japan. Founded in 1752, the Daishichi Sake Brewery has been managed by the Ohta family for ten generations. The brewery is world-renowned for its exclusive adherence to the Kimoto method, a labor-intensive, traditional starter-mash process that relies on natural lactic acid bacteria. Daishichi is also a pioneer of the Super-flat Rice Polishing technique, which removes undesirable proteins more effectively than conventional methods.
Description
This "Classic" expression was first released in 1999 to represent the "royal way" of fermented beverages, focusing on rich maturation rather than modern "dry and crisp" trends. It is matured for a full year to align its rich flavors and acidity.
Aroma: A complex, lactic nose featuring roasted nuts, toasted cereal, and earthy hints of Camembert cheese.
Palate: Full-bodied and mellow with umami-rich notes of vanilla, lychee, and shiitake mushroom.
Technical Profile: Brewed with Gohyaku Mangoku rice polished to 69%, it has a Sake Meter Value (SMV) of +3.0 and an alcohol content of 15%.
