Dillon's DSB Bitters is a red, multi-purpose aromatic bitter originating from Canada. It is produced by Dillon's Small Batch Distillers, a family-run distillery located in Beamsville, Ontario, in the heart of the Niagara wine region. Founded in 2012 by Geoff Dillon, the distillery's philosophy is centred on 'honest spirits', utilizing traditional copper pot stills and local, seasonal ingredients sourced from the Niagara peninsula.

Wine Description

The Dillon's DSB Bitters presents as a 'hard-working' take on classic aromatic bitters. It features an aroma of cherries with complex overtones of vanilla, cloves, allspice, and cassia. On the palate, it offers a smooth bitterness with a hint of cream soda sweetness and notes of cinchona bark and orris root. It is characterized by its complex, layered scents and well-integrated spice profile. The bitters are crafted using a 100% Niagara grape alcohol base and a mixture of 11 herbs and spices. It has an ABV of 50% and is made without artificial flavours or colours. While the distillery emphasizes natural, local, and responsibly sourced ingredients, the bitters are not certified organic.

Because of its cherry and spice notes, DSB Bitters is a versatile component for both beverages and culinary applications.
