Product description
This historic sweet red vermouth originates from France, produced in Chambéry within the French Alps (Savoy). Crafted by Maison Dolin—founded in 1821 by Joseph Chavasse and later named after Ferdinand Dolin—this expression remains the benchmark for Vermouth de Chambéry, the only protected Appellation d'Origine (AOC) for vermouth in France. Built upon a base of neutral white wine (sourced primarily from regional Ugni Blanc and Clairette grapes), it is infused with a proprietary recipe of over 50 alpine herbs, flowers, and spices, including wormwood, hyssop, mountain thyme, and cinchona bark. Sweetened naturally and colored with caramel, it is bottled at 32 proof (16.0% ABV), standing out as a distinctly lighter, drier, and more botanical alternative to heavy Italian sweet vermouths.
Spirit Description
This sweet vermouth displays a clear, garnet-red hue with warm copper-amber highlights in the glass. On the nose, it is floral, aromatic, and lifted, opening with initial aromas of dried rose petals, stewed strawberries, and orange peel, underlaid by a strong streak of alpine herbs, chamomile, forest floor, and soft cinnamon spice. On the palate, it feels light-to-medium-bodied, silky, and crisp, delivering a gentle, fruit-forward sweetness of stewed plums, candied citrus zest, and brown sugar, before transitioning into a dry, refreshing mid-palate driven by pine needle, wormwood bitterness, and clove. The finish is clean, medium-length, and refreshing, leaving trailing impressions of citrus oil, alpine botanicals, and a crisp, herbal dryness that avoids any cloying coat on the tongue.
Accolades
Dolin Rouge is universally celebrated by craft bartenders, sommeliers, and cocktail historians as an essential, foundational modifier in classic mixology. Garnering 90+ point ratings across platforms like Difford's Guide and Distiller, critics routinely laud Dolin for its elegance and botanical restraint, noting that its lighter French style allows underlying base spirits (such as craft gin, rye whiskey, or mezcal) to shine through without being smothered by heavy caramel or sugar syrup.
