Product description

This classic white wine originates from France, within the northern Burgundy region and the world famous Chablis subregion. Domaine Billaud Simon was established in 1815 by Jean Billaud and has grown into a pillar of the region, today managing roughly 17 hectares of exceptional vineyards. Situated along the banks of the Serein River, the estate focuses on sustainable viticulture and minimal cellar intervention, utilizing gravity-fed systems to capture the pure, precise, and flinty identity of Kimmeridgian limestone soils.

Wine Description

This Chablis displays a brilliant pale straw hue enhanced by light green reflections. The nose offers a crisp and expressive bouquet loaded with fresh citrus, green apple, lemon blossom, and subtle white peach, all underscored by an unmistakable flinty, sea breeze mineral edge. On the palate, it is airy, supple, and finely structured, showing a wonderful balance of racy acidity, bright citrus intensity, and a creamy texture from sur-lie maturation. The body is medium and clean, carrying through to a long, refreshing, and chalky finish. Crafted as a 100% Chardonnay varietal expression, this white wine typically features an alcohol by volume of around 12.5% to 13.0% and is produced under sustainable farming practices.
