Product description

This prestigious Grand Cru white wine originates from France, inside the northern Burgundy region and the iconic Chablis subregion. Domaine Billaud Simon was established in 1815 and manages roughly 17 hectares of exceptional vineyards along the banks of the Serein River. Sourced from the warm, amphitheatre shaped Vaudesir climat, the estate focuses on sustainable viticulture and gentle winemaking to capture the rich Kimmeridgian limestone soils.

Wine Description

This 2023 Grand Cru displays a pale gold hue highlighted by delicate green reflections. The nose offers an expressive and complex aromatic bouquet filled with white flowers like linden and acacia, combined with ripe white peach, fresh citrus, and an intense flinty minerality. On the palate, it is rich, supple, and beautifully structured, showing a wonderful harmony between concentrated fruit volume and bright, racy acidity. The body is medium to full, providing a round texture alongside chalky mineral tension that carries through to an exceptionally long, persistent, and clean finish. Crafted as a 100% Chardonnay varietal expression, the wine undergoes careful fermentation and aging in stainless steel and French oak barrels. The alcohol by volume for this bottling sits at 13.0%, produced under sustainable farming practices.

Food Pairing

The concentration, refined structure, and vibrant mineral core of this Grand Cru make it an outstanding match for fine gastronomy. It pairs exceptionally well with fresh oysters, royal seafood platters, pan seared sea scallops, and lobster. Structurally, its crisp acidity and broad depth also complement white fish served in delicate butter or cream sauces, roasted poultry, and well aged cheeses.

Vintage Quality

The 2023 growing season in Chablis delivered high quality, generous fruit with superb structural balance. The winemakers at Billaud Simon demonstrated great skill in managing harvest timing to preserve the crisp, limestone driven acidity while allowing the Vaudesir fruit to achieve optimal ripeness and depth.
