Originating from France in the Burgundy region, specifically within the Chablis appellation in the Yonne district, Domaine Gautheron Chablis 'Vieilles Vignes' represents an authentic, pristine, and mineral driven expression of old-vine Chardonnay. Family owned for over five generations and currently directed by Cyril Gautheron, the estate is situated in Fleys, east of the town of Chablis, and is widely acclaimed for its sustainable viticulture and traditional Burgundian focus. Sourced from estate vineyards with vines averaging 45 to 70 years of age planted on steep, north-east and south-east facing slopes, the vines root deeply into classic Kimmeridgian limestone subsoils packed with fossilized oyster shells (Exogyra virgula). The winemaking philosophy combines gentle whole-cluster pneumatic pressing, temperature-controlled fermentation in stainless steel vats (with a tiny portion fermented in aged oak barrels), and extended fine lees aging for 10 to 12 months, yielding a wine of extraordinary depth, concentrated fruit purity, and trademark oyster-shell minerality.
Wine Description
The wine presents a clear, luminous pale straw yellow colour with subtle greenish-gold highlights along the rim. An expressive, highly focused bouquet opens with intense aromas of green apple, juicy lemon, white peach, and fresh pear, interwoven with subtle notes of white spring flowers, wet chalk, crushed oyster shell, and a hint of blanched almond. On the palate, it is medium bodied, chiseled, and mouth-filling, delivering concentrated flavours of citrus zest, green orchard fruit, and flinty mineral iron, all anchored by a piercing, mouthwatering spine of natural acidity. Framed by a satiny texture derived from extended lees contact and a driving mid-palate structure, it concludes with a long, persistent finish marked by lingering lemon peel, saline minerality, and a crisp limestone grip. Composed of 100% Chardonnay, it effortlessly combines old-vine concentration and weight with Chablis' hallmark freshness, tension, and razor-sharp precision.
