François Chidaine is celebrated for his pivotal role in the Montlouis wine renaissance and is considered one of France's most revered white winemakers. Taking over from his father in 1989 with only four hectares, François has expanded the estate and is known as a pioneer of organic and biodynamic farming in the region. His winemaking philosophy includes a commitment to regenerative agriculture, encouraging biodiversity and establishing permanent cover crops to nurture the soil's complex fungal network.

Wine Description

This wine displays a pale lemon-green hue with a limpid, brilliant colour. It is made from 100% Sauvignon Blanc grapes, cropped from vines in the heart of the Touraine appellation. The aromatic profile is classic Loire Valley, offering a delicate bouquet of ripe citrus like key limes, grapefruit, and lemons, mingling with notes of white flowers and fresh cut grass. The palate is crisp and racy, defined by lean citrus fruits and taut, bright acidity. It is fleshy and balanced, with stone fruits and a strong chalky drive and mineral undertones.

This wine pairs beautifully with grilled fish, shellfish, sushi, sashimi, and ceviche. Other suggested pairings include asparagus, shrimp and avocado salad, and goat's cheese.
