Fukumitsuya Kazeyo-Mizuyo-Hitoyo 'Wind Water Man' is a Junmai sake originating from Kanazawa in the Ishikawa prefecture of Japan. It is crafted by Fukumitsuya Sake Brewery, the oldest brewery in Kanazawa, which was founded in 1625 during the Edo era. Currently run by the 13th-generation owner, the brewery transitioned to a 'Junmai-only' production model in 2001, focusing exclusively on pure rice sake brewed with centuries-old spring water from Mt. Hakusan.

Description

This sake presents a clear, light-bodied, and exceptionally smooth sensory profile designed for easy sipping. It features a delicate and fresh aroma with notes of tropical fruit, honeydew melon, mild florals, and a hint of anise or cedar. On the palate, it offers a mild sweetness balanced by moderate acidity and crisp umami, leading to a clean, refreshing finish. While some versions are bottled at 12% alcohol by volume, certain expressions are designed at a lower 9% ABV for a gentler experience.
