This fragrant and highly energetic white wine originates from Spain, within the Penedès Denominación de Origen (D.O.) appellation of Catalonia. Gallina de Piel is an imaginative winemaking project founded by David Seijas, the celebrated former Head Sommelier of the legendary three-Michelin-starred restaurant El Bulli. The estate operates under a philosophy of highlighting Spain's premier gastronomic terroirs by collaborating with local growers and focusing entirely on native varieties. The name "Ikigall" seamlessly combines the Japanese concept of Ikigai (the meaning of life or a reason for being) with the Gall (the iconic rooster native to the Penedès region). The grapes are sourced from Cal Cassanyes, resting at an altitude of 160 metres above sea level on silty loam and sandy soils that impart an ideal natural freshness to the fruit.
Wine Description
The Gallina de Piel Ikigall presents a bright, clean straw-yellow profile in the glass. Its sensory profile is highly aromatic, open, and intensely floral, unfolding a vibrant bouquet driven by white flowers, orange blossom, and vineyard peach from Ordal, layered with citrus sensations of mandarin and fresh fennel accents. On the palate, the wine is fresh, racy, and nicely textured, wrapping completely around the mouth with an energetic core of crisp citrus fruit and stone fruit. It is characterized by an outstanding, mouthwatering acidity and a distinct, saline minerality that drives into a lively, cleansing, and persistent finish.
