This unpeated single malt Scotch whisky originates from Scotland, produced in Aberlour within the Speyside region. Handcrafted at The GlenAllachie Distillery under the direction of industry icon Billy Walker, this expression forms part of their prized Wood Collection series. After maturing for over 9 years in premium American oak ex-bourbon barrels, the whisky underwent an intensive secondary maturation period of over 2 years in hand-selected Palo Cortado sherry puncheons. Palo Cortado—the rarest style of sherry, which begins its life naturally aging under flor like an Amontillado before unexpectedly developing the rich, full-bodied structure of an Oloroso—imparts a refined bridge between bright nuttiness and dark fruit. Non-chill filtered, natural in color, and bottled at a robust strength of 96 proof (48.0% ABV), it delivers a complex, dry, and aromatic presentation of GlenAllachie's heavy distillate.
Spirit Description
This single malt displays a deep copper to rich mahogany hue in the glass. On the nose, it is highly aromatic, layered, and complex, opening with initial wafts of roasted almonds, dark honeycomb, and espresso beans, followed by stewed plums, dried apricots, orange zest, and a touch of pipe tobacco. On the palate, it feels rich, oily, and mouth-coating, delivering an immediate wave of dark treacle tart, mocha, and candied ginger, before revealing mid-palate notes of dried figs, marzipan, and cinnamon sticks. The Palo Cortado wood influence introduces a distinct, savory nuttiness and structured dryness that balances GlenAllachie’s signature heather-honey sweetness. The finish is long, warm, and drying, leaving trailing impressions of charred oak, cocoa powder, roasted walnuts, and lingering baking spices.
