In the stillness of our quiet glen, we know that patience is rewarded. Nothing is rushed and every stage of our whisky making process is given as long as it needs. Uniquely-shaped stills nurse the simmering wash during the longest distillation of any Scottish whisky, prolonged contact with the copper coaxing sweet and fruity notes from the gently rolling vapours. That's why our barley is only ever dried by air, allowing the true Glengoyne spirit to shine through.
From here the precious spirit is transferred to casks made to order from European and American oak, themselves prepared for six years before they're ready to carry our whisky to maturity. The natural colour of the whisky is testament to decades within the wood alone. Nothing else is added, this is how we craft a whisky unlike any other. This is the Glengoyne way."
Glengoyne Legacy Series: Chapter 2 The second chapter in the Glengoyne Legacy Series has been matured in a combination of first-fill bourbon casks and refill sherry casks before being bottled in 2020. Every drop embodies Peter’s combination of forward-thinking and respect for tradition. Sweet aromas of vanilla, banana, peaches, coconut, lime and mint fill the nose. On the palate, creamy and well-balanced, apple crumble, honey drizzled toast, green grape and gentle spice, this richness builds in the warming finish, syrupy with hints of sweet oak and dates.
