Founded in 1922, Hakkaisan Brewery is situated at the foot of Mount Hakkai, an area renowned for its deep snow and exceptionally soft spring water known as 'Raiden-sama no Shimizu'. The brewery is dedicated to the philosophy of producing high-quality sake for as many people as possible, using the traditional techniques of Niigata's snow country.
Description
This signature Seishu is clear and colourless, representing the quintessential Niigata style of 'tanrei karakuchi' (light and dry). The aroma is fresh and delicate, featuring subtle notes of rice and a clean, floral bouquet. On the palate, it offers a smooth, mellow texture with a crisp purity that is free of extraneous elements. Despite being a regular class sake, the rice is polished to 60% and fermented slowly at low temperatures to ensure a refined, elegant body. It concludes with a mouthwatering, dry finish that disappears quickly. ABV 15.5%.
