Product description
This single malt Scotch whisky hails from Scotland, specifically the Island region, in the subregion of Orkney. The Highland Park Distillery has been crafting award-winning whisky in Kirkwall, Orkney, since 1798. Founded by Magnus 'Mansie' Eunson—a church beadle and notorious whisky smuggler—the distillery maintains and reimagines craft traditions, most notably by using locally sourced, aromatic heathered peat. This unique peat imparts a subtle, fragrant smoky character that delicately balances the complex, rich flavours of their spirit.
Whisky Description
The aroma is complex and spicy, opening with notes of dried cloves, fresh oregano, crushed pine needles, and lingering wood smoke. On the palate, you’ll find a powerful, spicy complexity with delicious intensity. Influenced by Pedro Ximénez sherry casks, the flavour leans into rich, sun-dried fruits like prunes, dates, and sultanas. First-fill European oak casks add aromatic hints of liquorice and winter spices, balanced by cocoa nibs and light oak from the ex-bourbon casks. The body is bold and oily, while the finish is spicy, rich, and delightfully fragrant, lingering on notes of sherried fruits and sweet spices.
Food Pairing
Given its full-bodied structure and prominent notes of dark dried fruit, aromatic spice, and gentle smoke, this whisky complements rich, hearty dishes. Suggested pairings include:
Hearty, high-fat content dishes like grilled red meats, such as a hay smoked rib of beef.
Strong, smoky blue cheeses.
Dark chocolate and dried fruits and nuts.
