Holzer Original Fernet Bitter (formerly known as Fernet Hunter) is a premium aromatic spirit produced in Austria, within the region of Upper Austria and the subregion of the Brunnwald Forest. The brand was co-founded by Raphael Holzer and Neville Kotewall, a partnership that bridges Raphael's four-generation family legacy of Austrian distilling with the modern cocktail culture of Hong Kong. The recipe dates back to the early 1900s and was originally developed by Raphael’s great-grandfather, Oskar Holzer, who was a key figure at the famed Stock Fernet Company in Trieste.

Spirit Description

This "fresh take" on a classic Italian bitter is crafted using a low-temperature infusion method to extract the delicate essence of handpicked botanicals found in the Alpine forests.

  • Botanicals: A core blend of Arnica, Orris Root, and Lavender, which are harvested and dried during the hunting season, the inspiration for its original name.

  • Appearance: A deep, vibrant amber hue derived entirely from natural botanical infusion, with no added caramel or artificial colouring.

  • Nose: Highly aromatic and floral, dominated by lavender, zesty citrus, and ginger, with a "spa-like" freshness.

  • Palate: Round and silky with a balanced profile of wildflower honey, black tea, and a hint of lime zest. Unlike traditional Italian fernets, it is less aggressive and medicinal, offering a more harmonious "sake-like" balance of sweet and bitter.

  • Finish: Pleasant and evolving bitter notes that linger with a clean, floral exit.

  • Technical Details: Bottled at 29% ABV.
