Jean Féry Savigny-lès-Beaune 'La Cabotte Aimande' 2022 is a complex and mineral white wine produced from the Côte de Beaune region in Burgundy, France.
The wine is crafted by Domaine Jean Féry & Fils, a family-run winery based in Échevronne that has been certified organic by ECOCERT since 2011. The 'La Cabotte Aimande' cuvée is a blend of Chardonnay grapes from two specific parcels, Ez Connardises and Planchots, where the vines average 50 years of age. The winery's philosophy emphasizes precise, plot-by-plot vinification and minimal intervention to preserve the freshness and purity of the fruit.
Wine Description
This 100% Chardonnay displays a pale gold colour with light green reflections. The initial aroma is marked by peony and wet limestone, evolving as it opens to reveal more ripe and fleshy scents of vineyard peach, almond, verbena, acacia, and honey, alongside citrus notes of grapefruit zest. On the palate, the attack is frank and fresh, offering generous fruit—including yellow apple, mandarin, and ripe lemon—supported by a creamy texture and well-integrated oak tones. It is characterized by its superb mineral expression, a hint of spicy complexity, and a long, saline finish.
The grapes are hand-harvested and transported in small crates to avoid damage. The vinification process is highly technical, involving the separate treatment of free-run and press juices. The wine is aged for a total of 14 months, with 10 months in oak barrels (25% new) followed by 4 months in stainless steel vats on fine lees to preserve freshness. The 2022 vintage typically has an ABV of approximately 13%.

This white Burgundy is tailor-made for gastronomy. It pairs excellently with grilled fish, seafood, and light meat dishes. It also complements various types of goat cheese, creamy mushroom risotto, or roasted poultry.
