This vibrant and 'flinty' white wine originates from France, within the highly celebrated Pouilly-Fumé AOC of the Central Loire Valley. Domaine Jean Pabiot et Fils is a historic family estate rooted in the village of Loges, where five generations of the Pabiot family have dedicated themselves to mastering the terroir. Today, the domain is expertly guided by Alain and Jérôme Pabiot. The estate operates under a strict winemaking philosophy focused on site transparency, working diligently across their 30-hectare footprint to protect the pure, chiseled varietal expression of the Sauvignon Blanc grape.

Wine Description

Jean Pabiot Pouilly-Fumé presents a bright, pale straw-yellow appearance in the glass with brilliant greenish reflections. Its sensory profile is incredibly precise, fresh, and expressive, opening with a high-toned bouquet of citrus zest, white peach, white currants, and fresh lemongrass, seamlessly layered with complex underlays of gunflint, white flowers, and chalky minerality. On the palate, the wine is medium-bodied, racy, and beautifully focused, showcasing a juicy core of gooseberry, grapefruit, and stone fruit. It is characterized by an outstanding, mouthwatering acidity and a highly distinct, smoky silex (flint) signature native to the Loire's premium slopes. The mouthfeel is energetic and direct, driving into a lengthy, refreshing finish defined by a lingering, tactile salinity and citrus peel.

This 100% Sauvignon Blanc wine reached a well-balanced alcohol content (ABV) of approximately 13%. Sourced from old vines averaging 30 years of age, the fruit is grown on a unique multi-terroir matrix composed of Kimmeridgian marl, limestone blocks (caillottes), and flint-rich soils. The grapes were gently pressed and fermented using native yeasts in temperature-controlled stainless steel tanks. To maximize its natural depth and texture, the wine was matured on its fine lees for several months in stainless steel before bottling, completely bypassing oak contact to safeguard its pristine freshness. Reflecting the domain's strict environmental standards, the property is certified under the strict Haute Valeur Environnementale (HVE 3) sustainable agricultural guidelines.
