Established in 1597 during the Azuchi Momoyama period, Kojima Sohonten is one of the oldest breweries in Japan and historically served as the exclusive sake purveyor to the Uesugi samurai clan. The brewery is currently managed by the 24th generation of the Kojima family.
Description
This sake is an undiluted genshu that presents a rich and voluminous sensory profile. The aroma is characterized by pure ginjo notes of melon, nashi pear, and red apple, with subtle hints of hay. On the palate, it offers a juicy texture and a medium plus body featuring flavours of pineapple and ripened fruit. It possesses a deep umami character and a well balanced sweetness, leading to a long and satisfying finish. The alcohol content is 16%.
Food Pairing
The robust body and intense umami of this genshu make it a versatile partner for rich and savoury dishes. It pairs exceptionally well with deep fried chicken, sweet and sour pork, or braised beef. For a Western style pairing, consider serving it with creamy cheeses or tomato based dishes to complement its natural acidity and sweetness.
