Product description

Produced by Kojima Sohonten, a historic brewery founded in 1597 that served as the official purveyor to the powerful Uesugi clan. The brewery recently transitioned to an all-Junmai facility, removing all added distilled alcohol from its production to focus on the pure expression of rice and water. The "Toko" brand name translates to "Eastern Light". This specific Karakuchi expression is designed to be crystal clear and exceptionally dry, standing out even among other premium dry sakes.

Description

This Junmai Daiginjo is characterized by its crystalline clarity and a slight hardness that highlights its refreshing nature. On the nose, it offers a joyful and fragrant bouquet reminiscent of young melons. The palate is lean and racy, delivering a sharp, clean taste with a smooth, dry finish that avoids a heavy lingering aftertaste. It is brewed using Dewakirari rice, a variety developed in Yamagata specifically for its ability to produce clean, sharp flavors. The rice is polished to 50%, the standard for the Daiginjo grade, to ensure a refined and elegant profile. ABV 15%, SMV +6 (Dry).

Food Pairing

The "Karakuchi" (extra dry) style of this sake makes it a superb palate cleanser and an ideal companion for a broad range of meals. Its crispness and melon notes pair perfectly with fresh seafood, particularly sushi, sashimi, and lightly grilled fish. Because it lacks heavy umami, it also works well with lighter Western dishes like salads with citrus dressings, vegetable tempura, or mild creamy cheeses like Brie or Camembert. It is best served well-chilled (around 5–10°C) in a white wine glass to help focus its delicate fruit aromas while maintaining its sharp, refreshing edge.
