Product description

This rare, small-lot red wine originates from Canada, crafted in the Osoyoos and South Okanagan Valley regions of British Columbia. LaStella Winery, situated along Osoyoos Lake, blends Tuscan passion with Italianate winemaking philosophies to produce structured, food-friendly wines. Cabernet Sauvignon is notoriously difficult to ripen consistently in the northern latitude of the Okanagan Valley, making La Sophia an exclusive release produced only in vintages where heat accumulation permits full phenolic maturity. Stylistically, LaStella fashions La Sophia after the refined, structured Cabernet Sauvignons of coastal Tuscany (Bolgheri) and Washington State rather than the ultra-plush styles of Napa Valley.

Wine Description

In the glass, the 2021 La Sophia exhibits a deep dark ruby-purple color with intense opacity. The expressive bouquet opens with classic Cabernet aromas of cassis, black cherry, and blackberry, layered with savory notes of dried sage, rosemary, cigar box tobacco, roasted coffee, and subtle vanilla spice from oak aging. On the palate, it is full-bodied, structured, and muscular, balancing dense dark fruit with a firm, chalky tannic backbone and vibrant natural acidity. Crafted as a 100% Cabernet Sauvignon varietal expression, the hand-selected grapes undergo small-lot fermentation followed by extended aging in French oak barrels (combining new and seasoned oak). The wine typically carries an alcohol by volume of 14.1% to 14.5%.

Food Pairing

The muscular structure, firm tannins, and savory herbal profile of this Okanagan Cabernet make it a natural pairing for prime red meats and rich, savory dishes. It pairs exceptionally well with grilled ribeye steak, roasted rack of lamb with rosemary and garlic, braised beef short ribs, or venison loin with a dark fruit reduction. For vegetarian options, opt for hearty dishes like roasted portobello mushroom steaks or wild mushroom risotto, alongside aged hard cheeses like sharp Cheddar, Gouda, or aged Pecorino.
