Product description
Founded in 1910, Matsui Shuzo has a long history in the production of sake and shochu before receiving its whisky distillation licence in 2015. The distillery is situated in a natural environment near Mount Daisen, utilizing the mountain's fresh snowfall and mineral-rich groundwater to reduce the spirit to proof.
Description
This single malt is distilled in copper pot stills and matured in American white oak bourbon barrels. It presents a light amber colour and an aromatic profile of freshly cut malted grains, vanilla, and a slightly camphorated peatiness. On the palate, the whisky is fresh and herbaceous, offering notes of toasted oak, brown sugar, and creamy vanilla enveloped in a smoky, minty touch. The finish is characterized by lingering peat smoke and fresh apple notes. It is bottled at 48% ABV without chill filtration or added colouring.
Food Pairing
The smoky and peaty character of this whisky makes it an excellent partner for rich, savoury dishes that can stand up to its bold profile. It pairs particularly well with smoked seafood, such as grilled mackerel (saba shioyaki) or raw oysters, which complement its iodine and marine notes. For meat pairings, consider braised or smoked meats, or even spicy Asian dishes like ramen and curry. It also serves as a fine accompaniment to strong cheeses like blue cheese or aged cheddar, and dark chocolate desserts that highlight its smoky complexity.
