Amaro Nepèta "Timous" (also known as Nepeta Timous Amaro Vero) is an artisanal, small-batch Italian herbal liqueur produced in the Siracusa countryside of southeastern Sicily, Italy. Produced organically, Timous is a modern interpretation of traditional, bone-dry herbal digestifs. Derived from ancient Greek terminology for wild thyme (Thymus capitatus), this expression sets itself apart by containing no added refined sugars—sweetened exclusively with a touch of raw Sicilian chestnut honey.
Spirit Description
Timous is produced via cold maceration of wild-foraged botanicals harvested across the Hyblaean countryside in Sicily. The spirit features an infusion of wild white thyme (thymus capitatus), Italian helichrysum (curry plant), Calabrian bergamot peel, angelica root, gentian, and rhubarb. The distinct infusions are cold-blended without filtration or artificial aging, creating an aromatic, green, and resinous herbal liqueur.
Colour: Light golden amber with bronze glints and a slightly opalescent, unfiltered clarity.
Aroma: Intensely balsamic, pungent, and herbaceous. The nose leads with wild thyme, piney crushed herbs, and bergamot citrus zest, underlaid by earthy notes of dried hay, cut grass, and chestnut honey.
Palate: Unusually dry, bitter, and savory compared to commercial amari. Upfront flavors of sharp white thyme and bitter gentian transition into bright bergamot spice, backed by subtle undertones of dark cocoa, vanilla, and honeyed earthy richness from the helichrysum.
Body: Medium-bodied with an oily, coating texture without cloying, syrupy weight.
Finish: Exceptionally long, warm, and dry. Leaves a lingering trail of dried herbs, cedar, hay, and an enduring herbal bitterness.
