The 2021 Mercury Head Cabernet Sauvignon presents an almost-black, opaque garnet hue, indicating its depth and concentration. On the nose, it offers immediate aromas of ripe cassis, charred ribeye, sandalwood, and freshly cut oak. Delving deeper reveals layers of blackberry, black plum, fennel, licorice, and dark chocolate. The palate is rich and balanced, showcasing a deep cassis core. The finish is sweet and lingering, with softly textured chalky tannins.
This wine is composed of 100% Cabernet Sauvignon, sourced from esteemed vineyards including Stagecoach and Warnock on Atlas Peak, Morisoli in Rutherford, and Taplin in St. Helena. It was aged for 13 months in French oak barrels, 58% of which were new, and boasts an alcohol content of 15.5%.
