This exceptional white wine originates from Italy, specifically from the Toscana IGT subregion of Tuscany. The historic Collazzi estate, located near Florence in the heart of Chianti Classico, spans 400 hectares and features an iconic villa originally designed by Michelangelo. Owned by the Marchi and Frescobaldi families, the winery operates independently with a dedicated winemaking philosophy centred on meticulous, sustainable practices and gentle, hand-harvested vineyard management.
Wine Description
The Collazzi Otto Muri Bianco presents a rich, straw yellow colour accented by beautiful greenish reflections. On the nose, it reveals a complex and variegated bouquet of orchard blossoms, white stone fruit, and fresh hay, underscored by hints of crushed stone and blanched almonds. The palate is medium bodied and beautifully structured, delivering an intense profile of ripe yellow peach, mango, and a characteristic note of toasted hazelnuts. Crafted entirely from 100% Fiano grapes grown on eight terraced vineyard walls, the wine achieves its remarkable waxy, tactile texture and complexity through extended aging on the lees until spring. It shows excellent balance, balancing its persuasive richness with a crunchy, sapid acidity and a long, focused mineral finish.

This versatile white wine pairs elegantly with lean white fish, shellfish, and simply prepared garlic shrimp. It is equally delightful alongside lighter poultry dishes, traditional Italian Cacio e Pepe, or an autumn mushroom risotto where the wine's inherent earthiness can truly shine.
