Solaris White Peach Ale is a warm-weather, patio-defining staple from Victoria, British Columbia’s Phillips Brewing & Malting Co. Renowned across Western Canada for their boundary-pushing brewing culture, in-house malting facility, and eye-catching comic-book-style art, Phillips created Solaris to capture pure summer sunshine in a glass. While originally known under the "White Peach Ale" banner, it delivers a deeply refreshing hybrid experience: blending the crisp, effervescent, and wheaty foundation of a Belgian-Style Witbier with real fruit puree and vibrant citrus aromatics.

Beer Description

Solaris pours a radiant, hazy golden-straw color with pale peach highlights, topped by a lively, frothy white foam head that holds a persistent ring and leaves soft, delicate lacing.

Aroma: The nose is extraordinarily bright, fresh, and fruit-forward. It opens with an immediate burst of sweet white peach flesh and fuzzy peach nectar, quickly followed by bright top notes of lemon-lime zest, crushed coriander, and sweet orange peel, resting over a clean, doughy wheat grain base.

Palate: On the tongue, it is light-to-medium bodied with a brisk, spritzy, and thirst-quenching carbonation. It leads with an authentic splash of succulent white peach and tart citrus, offering a subtle fruit sweetness that never crosses into syrupy territory. The mid-palate reveals the classic witbier backbone; notes of cracked wheat, faint herbal spice, and light yeast esters before finishing clean, dry, and exceptionally crisp with a mouth-watering fruit acidity.

Profile: It sits at a friendly, highly sessionable 4.3% ABV and a very low bitterness of approx. 10–12 IBU, prioritizing fruit-forward aromatics, refreshing acidity, and high drinkability over hop bite.

Technical Notes: Solaris is built on a base of Canadian two-row barley malted in Phillips’ own proprietary malt house, blended with a generous proportion of malted and unmalted wheat to provide body, haze, and a silky mouthfeel. It is fermented with a clean Belgian ale yeast strain that contributes subtle clove and citrus esters. The beer is infused with natural white peach puree and citrus peel, which integrate smoothly on the cold side to preserve delicate aromatic volatiles without adding artificial, cloying sweetness.
