This structured and 'crystalline' sparkling wine originates from Spain, within the esteemed Cava D.O. appellation in the heart of Catalonia. Crafted in the Penedès region the historic epicenter of Spanish sparkling winemaking Poema Cava Brut is produced using traditional method secondary fermentation in the bottle (Método Tradicional). Sourced from choice, sustainably farmed vineyards situated across the rolling chalk and limestone hills of Penedès, the vines are rooted in limestone-rich, gravelly clay soils. The Mediterranean microclimate features bright, sun-drenched days tempered by cool breezes from the Balearic Sea and nighttime air currents flowing down from the Montserrat mountains. This diurnal temperature shift enables classic local white varieties to reach complete phenolic maturity while retaining a sharp, mouthwatering natural acidity.

The Poema Cava Brut presents a luminous, pale straw-yellow color in the glass with shimmering greenish-silver highlights and a fine, persistent, energetic stream of delicate bubbles (mousse). Its sensory profile is exceptionally fresh, high-toned, and complex, delivering an expressive, fruit-forward, yet elegant portrait of traditional Spanish sparkling wine. The bouquet opens with an inviting display of fresh Green Delicious apples, crisp Bosc pear, and Meyer lemon zest, seamlessly layered with delicate underlays of white floral blossoms, freshly baked bread, toasted almond, and a subtle line of crushed limestone minerality.
