Redbreast Pedro Ximénez (PX) Edition is a single pot still Irish whiskey produced by Irish Distillers at the historic Midleton Distillery in County Cork, Ireland. As part of the acclaimed Redbreast Iberian Series, this expression celebrates the long-standing connection between Midleton and prestigious Spanish bodegas. Building upon Redbreast's iconic sherry-influenced foundation, the PX Edition takes the signature single pot still liquid and adds a finishing period in rare Pedro Ximénez sherry casks, introducing a dark, decadent fruitiness to the classic spice and cream profile.
Spirit Description
Redbreast PX Edition is crafted from a mash bill of malted and unmalted barley, triple-distilled in traditional copper pot stills at Midleton. The whiskey undergoes its initial maturation in a combination of ex-bourbon and ex-Oloroso sherry casks. It is then re-casked into hand-selected Pedro Ximénez hogsheads sourced from Antonio Páez Lobato in Jerez, Spain, for a finishing period. The intense sweetness and concentration of the PX casks infuse the whiskey with deep dark fruit, chocolate, and sticky fig notes, complementing the robust pot still spice.
Colour: Deep mahogany with rich ruby and amber highlights.
Aroma: Rich, sweet, and complex, opening with dried figs, raisins, sultanas, and candied orange peel, backed by toasted nuts, dark chocolate, sweet oak, and warming pot still spices like nutmeg and cinnamon.
Palate: Luxurious, syrupy, and full-bodied on the entry. Upfront flavors of dark berry compote, sticky dates, and plum yield to toasted wood, roasted walnuts, dark chocolate-covered espresso beans, and vibrant pot still spice.
Body: Full-bodied with a heavy, velvety, and mouth-coating viscosity.
Finish: Exceptionally long and warm, trailing off with persistent notes of dried fruit, caramelized sugar, sweet oak tannins, and a dry, lingering spice.
ABV: Bottled at 46% ABV (92 Proof) and non-chill filtered.
