Simonnet-Febvre Chablis Mont de Milieu Premier Cru is a prestigious white wine from one of the most celebrated 'climats' on the right bank of the Serein river in Chablis, France. Founded in 1840, Maison Simonnet-Febvre is one of the oldest traditional producers in the region and has been owned by the renowned Louis Latour family since 2003. The estate is particularly famous for being the only producer in Chablis to maintain the historical tradition of making sparkling wines (Crémant de Bourgogne) alongside its classic still Chablis range.

Wine Description

This wine exhibits a bright, straw-yellow hue and a complex sensory profile that balances ripeness with intense mineral power. The bouquet is highly expressive, offering fragrant aromas of wild honey, lemon curd, and hazelnut, with exotic floral hints of hibiscus and a distinct iodized (saline) character. On the palate, it is medium-to-full-bodied and powerful, featuring a rich, round texture with flavours of ripe orange, melon, and baked bread, underscored by the classic chalky minerality of the Mont de Milieu terroir. The structure is defined by a zesty acidity and citrus-bitter notes that lead to a remarkably long and saline finish.
