Product description

Produced by Tatenokawa Shuzo, a brewery founded in 1832 that became the first in Yamagata to produce only Junmai Daiginjo grade sake. The name "Seiryu" translates to "Clear Stream," a tribute to the pristine water of the Mogami River and the refreshing, transparent nature of this specific brew. It is crafted using local Dewasansan rice, a variety developed specifically for the Yamagata climate.

Description

This sake is exceptionally light and smooth, designed to be an easy-drinking introduction to the world of premium Daiginjo. The nose is gentle and fruity, featuring scents of fresh blackcurrant, green apple, and white flowers. On the palate, it is light-bodied and crisp, offering a subtle sweetness balanced by a soft acidity and a clean, refreshing finish. By polishing the rice to 50%, the brewery ensures a refined profile that remains approachable for daily enjoyment. ABV 15%.

Food Pairing

Because of its "Clear Stream" character, this sake is a fantastic companion for lighter seasonal dishes. It pairs beautifully with white fish sashimi, cold tofu with ginger, and lightly dressed spring salads. Its clean finish also makes it a great match for delicate steamed appetizers like dim sum or shrimp dumplings. It is best served well-chilled in a wine glass to fully appreciate its delicate aromatics and crisp structure.
